Bowl of excuse to eat sriracha

Sriracha Pad Thai

It's kind of a pad thai, but not really. This is basically a stir fry recipe, so you can either do everything in one pan / wok, or work in stages.

Directions

In a separate bowl, combine to make a sauce:

  • 2 tablespoons Sriracha sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce

Saute until translucent:

  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 bunch green onion bottoms, minced

Add and saute until they just start to turn tender:

  • 1 baby bok choy, coarsely chopped

Add and saute until they just start to turn pink and curl:

  • 1/3 pound shrimp

Add and scramble:

  • 2 eggs

Add and combine:

  • Noodles (lo mein, rice noodles, etc), cooked until tender
  • 1 bunch green onion tops, chopped
  • 2 tablespoons cilantro, chopped
  • bowl of sauce, from above

Garnish with:

  • 1 teaspoon cilantro, chopped
  • 1 wedge of lime
  • 1 tablespoon roasted peanuts, crushed
