Tilapia Pasta

Directions

Saute until translucent:

  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 1 teaspoon red pepper flakes

Pan fry until the fish begins to flake:

  • 1/3 pound fish fillet (halibut, tilapia, etc), seasoned with salt
  • 6 San Marzano tomatoes, halved lengthwise
  • 2 teaspoons capers, with juice

Combine, breaking up the fish:

  • 1 serving thin long-noodle pasta (capellini, spaghettini, linguini, etc), cooked al dente
  • 2 tablespoons pasta water
  • 2 tablespoons parsley, coarsely chopped
  • 1 tablespoon olive oil

Garnish:

  • Parmesan, freshly grated
  • 1 teaspoon parsley, coarsely chopped
